The restaurant was founded by chef Steven Steeves and his wife, Rada Valkova, whose shared passion for great food and hospitality gave Fresh & Co its heartbeat. Over the years, they built a loyal following with their seafood-forward menu, global influences, and commitment to welcoming everyone through the door.

When Steven passed away unexpectedly in 2020, the loss was deeply felt across the community. Regulars, friends, and fellow restaurateurs rallied around Rada and the Fresh & Co team, helping to keep the spirit of the restaurant alive. Longtime kitchen team members Ryan Townsend and Kyle Ruger stepped forward, working closely with Rada to carry the vision forward. In 2023, the three became official business partners, ensuring Fresh & Co would continue to evolve while staying true to its roots.

Today, the restaurant’s menu draws inspiration from Rada’s Eastern European heritage, the team’s travels, and the bounty of Maine’s coast. Seafood dishes like lobster ravioli and Brazilian seafood stew sit alongside seasonal specials, local beers, and an ever-changing, global wine list.
